My Noodelist tips #4: Tempeh and Veggie Stir Fry
Directions:
In a bowl, mix the sesame oil, rice vinegar, maple syrup, and soy sauce. Slice the tempeh and let it marinate in the mixture.
Prepare carrots and snow peas, and cook them in a saute pan on medium heat until tender. Start with carrots only, as they take a bit longer to cook.
Remove the carrots and snow peas and set aside in a bowl. Cook the tempeh in the same saute pan. Add some oil if needed. Cook for about 5 minutes until golden, or according to the package.
Make the Noodelist noodles. When they are ready, add the vegetables, tempeh and scallions on top.
