My Noodelist tips #4: Tempeh and Veggie Stir Fry
Ingredients:
- Noodelist noodles, your choice of flavors 
- 1 package of tempeh 
- 1 tablespoon sesame oil 
- 1 tablespoon rice vinegar 
- 1 tablespoon soy sauce 
- 1 tablespoon maple syrup 
- A bunch of carrots, cut in thick match sticks 
- A handful of snow peas, approximately half-inch pieces chopped diagonally 
- 2 tablespoons sunflower oil 
- A couple of scallions, chopped diagonally in thin slices 
Directions:
- In a bowl, mix the sesame oil, rice vinegar, maple syrup, and soy sauce. Slice the tempeh and let it marinate in the mixture. 
- Prepare carrots and snow peas, and cook them in a saute pan on medium heat until tender. Start with carrots only, as they take a bit longer to cook. 
- Remove the carrots and snow peas and set aside in a bowl. Cook the tempeh in the same saute pan. Add some oil if needed. Cook for about 5 minutes until golden, or according to the package. 
- Make the Noodelist noodles. When they are ready, add the vegetables, tempeh and scallions on top.
