My Noodelist tips #4: Tempeh and Veggie Stir Fry

Ingredients:

  • Noodelist noodles, your choice of flavors

  • 1 package of tempeh 

  • 1 tablespoon sesame oil 

  • 1 tablespoon rice vinegar 

  • 1 tablespoon soy sauce 

  • 1 tablespoon maple syrup 

  • A bunch of carrots, cut in thick match sticks

  • A handful of snow peas, approximately half-inch pieces chopped diagonally 

  • 2 tablespoons sunflower oil 

  • A couple of scallions, chopped diagonally in thin slices 

Directions:

  1. In a bowl, mix the sesame oil, rice vinegar, maple syrup, and soy sauce. Slice the tempeh and let it marinate in the mixture.

  2. Prepare carrots and snow peas, and cook them in a saute pan on medium heat until tender. Start with carrots only, as they take a bit longer to cook. 

  3. Remove the carrots and snow peas and set aside in a bowl. Cook the tempeh in the same saute pan. Add some oil if needed. Cook for about 5 minutes until golden, or according to the package. 

  4. Make the Noodelist noodles. When they are ready, add the vegetables, tempeh and scallions on top.
