My Noodelist tips #2: Crispy Garlic and Spring Onions

This one is pretty simple, with nice little twist and gets whole family happy. It’s modified from Bon Appetit recipe - Noodelist with Garlic by Maija

Ingredients:

  • 1/3 cup sunflower oil

  • 8 green onions, thinly sliced 

  • 1 inch of ginger, thinly sliced 

  • 1/3 cup chopped cilantro, mint, thai basil, watercress (stems and leaves) 

  • 1 serrano chile, seeds removed, thinly sliced 

  • 2 tablespoons soy sauce 

  • 1 tablespoons rice vinegar 

  • 2 tablespoons toasted sesame seeds 

  • Pinch of black pepper 

  • Pinch of salt 

  • Pinch of sugar 

Directions:

  1. Heat the oil in a medium saucepan over medium heat. Put aside half of the scallions in a bowl. Cook the remaining scallions, garlic, and ginger until they turn golden and crispy, for about 6-8 minutes. 

  2. Using a sieve, pour the mixture over the scallions in a bowl; set aside the crispy bits that didn’t filter through. Mix the scallions and oil; add the remaining ingredients (except for the sesame seeds), and set aside.

  3. Meanwhile, make the Noodelist with Garlic noodles. When the noodles are ready, garnish with the onion/oil mixture, followed by the crispy bits. Lastly, sprinkle the sesame seeds on top and enjoy!
